Recipe: Delicious Mimi's Chili
Mimi's Chili. It is the best I have had and make it often. I also give it as gifts (see Note). It is actually my daughter's base for chili and my spices.
It isn't awfully spicy, but it has a zing to it. To be honest, I really don't like chili very much, but this takes the cake. This is the perfect chili for chili dogs, too. You can cook Mimi's Chili using 5 ingredients and 2 steps. Here is how you achieve it.
Ingredients of Mimi's Chili
- Prepare 1 of 2 lbs ground beef (browned & drained).
- Prepare 28 oz of can Whole Peeled Tomatoes- liquid reserved.
- You need 11 oz of can Mexicorn, drained.
- It’s 40 oz of 2- cans kidney beans (one light, one dark)- liquid reserved.
- Prepare 1 of 2 packets chili seasoning– mild, reg or spicy!.
It is very easy & you will love it! But a perfect time to warm up with a steaming bowl of Mimi's Favorite Chili. (Uh, don't be put off by the green stuff mixed in with the sour cream in the above picture. I served Mexican dinner on Christmas Day and my husband mixed the guacamole and sour cream together. It looks questionable, but was delicious!) Mimi's Chili I have made this recipe many ways (added onions while cooking or chopped green pepper) below is the way my family likes me to make it.
Mimi's Chili step by step
- In Crock Pot mix all above ingredients! NOTES:* I add the liquid of one of the cans of beans. I drain the 2nd can not worrying if I get it all out. **I smash with my hands each tomato before putting in the crockpot. Save the juice incase you want to add liquid later!.
- Cook on low for 6 hours or high for 4 hours!.
