Recipe: Delicious Mimi's Chili

Mimi's Chili. It is the best I have had and make it often. I also give it as gifts (see Note). It is actually my daughter's base for chili and my spices.

Mimi's Chili It isn't awfully spicy, but it has a zing to it. To be honest, I really don't like chili very much, but this takes the cake. This is the perfect chili for chili dogs, too. You can cook Mimi's Chili using 5 ingredients and 2 steps. Here is how you achieve it.

Ingredients of Mimi's Chili

  1. Prepare 1 of 2 lbs ground beef (browned & drained).
  2. Prepare 28 oz of can Whole Peeled Tomatoes- liquid reserved.
  3. You need 11 oz of can Mexicorn, drained.
  4. It’s 40 oz of 2- cans kidney beans (one light, one dark)- liquid reserved.
  5. Prepare 1 of 2 packets chili seasoning– mild, reg or spicy!.

It is very easy & you will love it! But a perfect time to warm up with a steaming bowl of Mimi's Favorite Chili. (Uh, don't be put off by the green stuff mixed in with the sour cream in the above picture. I served Mexican dinner on Christmas Day and my husband mixed the guacamole and sour cream together. It looks questionable, but was delicious!) Mimi's Chili I have made this recipe many ways (added onions while cooking or chopped green pepper) below is the way my family likes me to make it.

Mimi's Chili step by step

  1. In Crock Pot mix all above ingredients! NOTES:* I add the liquid of one of the cans of beans. I drain the 2nd can not worrying if I get it all out. **I smash with my hands each tomato before putting in the crockpot. Save the juice incase you want to add liquid later!.
  2. Cook on low for 6 hours or high for 4 hours!.
